Have you tried making Onigirazo? If you have no idea what I'm talking about, they are pretty much flatten sushi sandwiches. These are so much easier and less tedious to make than using bamboo mat to mold them into sushi shapes. All you need to do is to wrap it up like a present! A couple days ago, I was just thinking about what I can put in my "sandwiches" which can be easily digested and yet loaded with tons of flavour. I decided to keep it real simple and use what I have in my fridge (leftovers); ripe avocados, roasted korean seaweed and tomato pasta puree. 

Ingredients you will need: 

  • 2-3 sheets of sushi Nori 

  • 2-3 cups of steamed white rice or purple rice (high fiber) 

  • 1 ripe avocado (sliced) 

  • 1/2 cup of tomato puree or pasta sauce 

  • 6 sheets of Korean roasted nori sheets (mini ones) 


  • 1-2 Romaine lettuces

Serving for 2-3 people

What I like about this recipe is that it is so simple to make, and most likely all the ingredients can be found in your kitchen cabinet or in the fridge! Comforting, warm, and stay bloat-free after enjoying this meal. Usually, I am pretty allergic to wheat and gluten foods, so gluten-free is the only way to go! I like my GF pastas to be either made of rice, quinoa or corn. Flavourful, chewy and super satisfying. In fact, this recipe can be prepared and served in 30 mins! Say goodbye to bloating, gassy stomach and indigestion. Furthermore, pink salts are a way healthier option than regular salt. Pink salts prevent bloating in individuals yet providing a wholesome savoury flavour to your dishes, not to mention the high amounts of minerals in these pink salts. Yes, 3 Ingredients ONLY! You heard it right. *No eggs* *No milk* included.

I made a small patch today because it was just too easy to make and baked in less than 10 mins! They are soft-baked, chewy and yet very toasty and nutty. I love how simple this recipe is and purely vegan! Perfect for your kids and family on the weekend mornings when you are too lazy to whip up a storm! 


▪️1/2 cup peanut butter (vegan-friendly version)

▪️1/2 cup gluten-free flour (I used Bob's Mill brand of GF flour)

▪️1/4 cup of 100% maple syrup

Makes 4-5 medium cookies


Place all three ingredients in a mixing bowl and mix well with a spatula. Once the mixture forms into a slightly sticky dough-like texture, it is ready for the toaster oven! Use can either wear plastic gloves to roll the dough into cookie balls or you can just simply use a spoon to scoop them onto the oven tray over parchment paper and use a fork to flatten the cookies with a little imprint design on top. This is great comfort food and healthy, not to mention, it is also 100% Gluten-FREE! The pasta noodles I bought were made from 100% corn flour, but you can also use other kinds of gluten-free flour pastas, such as, quinoa pasta, rice pasta, etc. Try not to use wheat flour pasta as they tend to cause bloating in most people. Similar to me, I tend to bloat when I consume wheat products, so do minimise or completely remove wheat from your daily diet. Furthermore, do note that when using pink salts, the saltiness level is actually pretty low as compared to regular/table/sea salt. So if you are planning to use regular salt instead, half the amount of the recipe. Some of you might be also wondering what is Tamari? Well, the difference between Tamari and soy sauce is that Tamari contains no wheat, whereas soy sauce contains wheat (gluten). For people who are highly allergic to gluten foods, I would suggest using Tamari in your cooking.

Doesn't this look amazing! This recipe is really simple and so easy to make, I made this in just under 20 minutes! The great thing about this recipe is that it is fully vegan, gluten-free (yes! gluten-free!) and dairy-free. You can use your favorite gluten-free pasta, in which I like to use "Ancient Harvest" gluten-free pastas made from 100% organic corn and quinoa flour. This time, I used 100% corn pasta which is GMO-free. Another thing about gluten-free pastas, is that they cook a lot faster than regular wheat or grain pastas. So this is a win-win situation! I added some of my favorite, easy to digest ingredients for my pasta, as some of you might know, I have an uber sensitive tummy and there are a lot of foods that I am unable to digest well. So here is it! Easy on the tummy, bloat-free recipe below:


  • 5 garlic cloves (sliced)

  • 1 cup of white mushrooms (sliced)

  • 1 cup of fresh spinach leaves (chopped)

  • 3 tbsp of olive oil 

  • 3 tbsp of Tamari sauce

I love how highly nutritional this parfait is! All power packed in one glass. There is loads of Omega-3 fatty acids from the activated chia seeds, Calcium from the almond milk (which helps in soaking the chia seeds to form a pudding-like texture) Vitamin C and antioxidants from the sliced strawberries,  frozen mangoes and bananas which are high in potassium and aids in good skin complexion!   • 7 tbsp of chia seeds

  • 120ml of any nut milk/soy milk 

  • 1/2 cup of sliced fresh strawberries

These are so easy to make, and ready in less than 15 mins! Instead of using dairy cheese, try this brand called "Violife" vegan cheddar cheese which is dairy-free, gluten-free, organic and made from solely 100% coconut oil. I like to add simple ingredients like chopped white mushrooms and tomato puree for a more flavourful bite! I used a heated pan to toast the wraps, you can use an oven too but it might take some time. A heated pan is the most efficient in my opinion! 

Here are the ingredients: 

  • 3-4 plain tortillas (find gluten-free ones if you can) 

  • 2 cups of tomato puree 

  • 1 cup of vegan "cheese" (sliced)

  • 2 cups of white mushrooms (sliced)

  • 1 cup of romaine lettuces (chopped) 

Servings for 2

You know what I love about pizzas? You can add whichever toppings you like and it will always taste amazing! Usually for vegan/vegetarian pizzas, they come in cheese-less versions. But what is the point of that? It will just be called tomato-flavored bread, not pizza. I finally found the right vegan cheese that suits my taste and I am sure you will feel so too! I got these from @violife and I personally think that the cheddar flavoured "cheese" is the closest flavour to the real thing. Their "cheeses" are made from 100% coconut oil and are so tasty. From the photo, it seems like the cheeses look very much like egg yolks but fret not, these are just round-shaped "cheeses" when using a round-shaped cutter.

You are wondering whether bread is considered vegan? Well, it really depends on what kind of bread you are referring to, there are some breads that are made from milk, butter and eggs. But these ones that I have chosen are made WITHOUT dairy, butter or milk!

I would usually go to my favorite vegan bakery close to my home to get these baking supplies. Other vegan breads that you can safely buy from most bakeries are baguette, rye bread, sourdough and ciabatta. As for sandwich bread like this, usually they are made from milk (hence, for the pure white color). But I am so lucky to get these from my vegan bakery!
