Light Fluffy Blueberry Maca Pancakes

Used Organic Burst Maca powder to make these lovely pancakes, which gives an intense nutty, malt and caramelised flavour. The great thing about their Maca is that they are a blend of all the coloured maca roots, not just the white or red. It is a combination of all: Red, white, black and purple maca, giving you the maximum nutrition out of all these powerful roots. Especially for us women, we tend to struggle with PMS symptoms like mood swings, bloating, acne etc. Maca really helped me to rebalance my hormones and keeps me energised throughout the week.

Recipe ingredients:

1 cup of oats flour (gluten-free)

1 tsp of Organic Burst Maca powder

1 tbsp of maple syrup

1 tbsp of coconut sugar

1 medium banana

1/2 cup of almond milk

1 tsp of baking powder

1 tsp of vanilla extract

1/2 tsp of cinnamon powder

1/4 cup of fresh blueberries

Make 6-7 pancakes

Blend all except blueberries in a power blender till smooth, slightly thick but still runny consistency. Stir in the fresh blueberries and pour batter into non stick pan. Oil free! I would recommend that you use a ice cream scoop to pour batter into pan and cook one pancake at a time. So that they will be all of the same size. Time consuming but worth it! Unless you have a bigger pan, well I don't. Enjoy the weekend with fluffy pancakes! Gone are the days that you need to use butter, oil, white flour, white sugar, milk or eggs. Aha! Go Vegan!
