(Fully Vegan!) Avocado Melt Waffle Iron Sandwich
You are wondering whether bread is considered vegan? Well, it really depends on what kind of bread you are referring to, there are some breads that are made from milk, butter and eggs. But these ones that I have chosen are made WITHOUT dairy, butter or milk!
I would usually go to my favorite vegan bakery close to my home to get these baking supplies. Other vegan breads that you can safely buy from most bakeries are baguette, rye bread, sourdough and ciabatta. As for sandwich bread like this, usually they are made from milk (hence, for the pure white color). But I am so lucky to get these from my vegan bakery!
Also, there have been many new brands coming up with vegan, dairy-free cheeses in the market these days. I got this vegan cheddar cheese from "Violife". They are solely made from organic coconut oil and has a slight cheesy flavour. One other common vegan cheese is "Daiya" which is made from soy. My favorite sandwich fillings are usually avocados, mushrooms, lettuces and tomatoes. But today, my recipe consists of mashed avocado, romaine lettuces, vegan cheddar and chilli flakes.
1 whole avocado (very ripe)
4 slices Violife vegan cheddar cheese
2 tsp chilli flakes
8 pieces of romaine lettuce
4 slices vegan sandwich bread
***Waffle Maker is required for this recipe

Preheat the waffle maker while you prepare the ingredients above. Peel the avocado and remove seed. Mash avocado with a fork and set aside. Now lets start stacking! Firstly, place one piece of sandwich bread at bottom, add cheese, followed by 2 spoonfuls of mashed avocado. Add chilli flakes over avocado. Stack lettuces over top and another layer of cheese. Lastly cover with another piece of bread. Open your lid of your waffle maker and place the prepared sandwich right in the centre of your maker. You will hear the sizzling sound. Nice.
Press the top lid down and let it bake for about 3 minutes or so, until light golden brown. You will seen the imprints of the waffle pattern. Bake for an extra minute if you like your waffles sandwich crispier. The cheese would be melted by now! Take out and serve immediately. Enjoy while warm and toasty! You can experiment with other favorite fillings of yours and have fun with the whole family!
