Fully Vegan Mushroom & "Cheese" Toasted Wraps



These are so easy to make, and ready in less than 15 mins! Instead of using dairy cheese, try this brand called "Violife" vegan cheddar cheese which is dairy-free, gluten-free, organic and made from solely 100% coconut oil. I like to add simple ingredients like chopped white mushrooms and tomato puree for a more flavourful bite! I used a heated pan to toast the wraps, you can use an oven too but it might take some time. A heated pan is the most efficient in my opinion!

Here are the ingredients:

  • 3-4 plain tortillas (find gluten-free ones if you can)

  • 2 cups of tomato puree

  • 1 cup of vegan "cheese" (sliced)

  • 2 cups of white mushrooms (sliced)

  • 1 cup of romaine lettuces (chopped)

Servings for 2


Method

Preheat pan to medium low heat. Meanwhile, prepare the tortilla wraps. Start with laying a piece of tortilla, spoon tomato puree onto the centre of the tortilla, followed by 2 tbsp of mushrooms, depending on how hungry you are! Finally, add 2 tbsp of vegan cheese, and wrap the tortilla by folding inwards. Set aside. Repeat steps for the rest of the tortillas. Place the wrapped tortillas onto the hot pan and let it toast on each side for 2 mins or so. The tortillas would be lightly browned and the cheese inside of the wraps would be melted and gooey! Once done, place onto a flat plate, and drizzle over tomato puree and chopped romaines. Serve immediately while still warm.
