Fully Vegan Sandwich for Weekend Lunch
Have you tried adding fresh strawberries to your avocado sandwich? Instead of drizzling fatty dressing on your sandwich, why not add natural sweetness to it such as strawberries! I like mine with either strawberries or red grapes. Here I have assembled mashed avocado (seasoned), sweet corn, strawberries and romaine lettuces for crunch on black rice ciabatta bread (which is vegan too!).
1 large ripe avocado (seasoned with black pepper, 1 tbsp of lemon juice, 1 tsp of pink salts)
1 cup of sweet corn (removed from cob)
7-9 fresh strawberries (sliced)
4-5 pieces of romaine lettuces
**NO DRESSING REQUIRED.
