Happy Halloween! Prepare for Sweet Pumpkin Pancakes...



These are surprisingly tasty and has a sweet savory flavor! Amazing how great this taste after adding some spices to give this a whole new meaning! At least for the Halloween today! Cant wait for the horror fun tonight, did you try out the haunted houses yet?

Anyway, here is the recipe ingredients to make this. If you are into savory sweet pancakes, this is definitely for you! Regardless of whether it is halloween or not. Pumpkin pancakes, anyday!

Ingredients:

1 cup of gluten free oats flour from MyProtein use code "ALICIA15" to get 15% off their oats

1 cup of butternut pumpkin (squash)

1/2 cup of unsweetened almond milk

1/2 tsp of cinnamon powder

1/4 tsp of nutmeg powder

1/2 cup of 100% maple syrup

Pinch of pink salts

1/4 tsp of vanilla extract (optional)

Make 3 medium-sized pancakes.

Before you blend all of these ingredients in a power blender, make sure to steam the butternut in advance so that you get a soft cooked texture. Mash up the butternut into a puree. Blend all of the above ingredients together till smooth. Heat the non-stick pan on med-low heat, and pour the batter into pan. Cook on both sides with a total of 1-2mins. FYI, you do not need oil for this recipe. Super healthy and so good for you! High in protein, fiber, carotene A and endless anti-inflammatory properties. You will be immune to Horror! :)
