Mixed Veggies Avocado Baguette Sandwich (fully vegan)



Some of you might be asking, "Are you sure bread is vegan?" The answer is, "Only a few selections of bread are vegan, which are mainly baguette, sourdough and ciabatta". These breads are made from just flour, water, salt and yeast. Today I am using baguette as I love the crispy skin and chewy insides especially after toasting them.

Ingredients:

Avocado spread:

1 very ripe avocado (mashed)

Dash of black pepper

1/4 lemon (freshly squeezed)

Dash of paprika (optional)

Mixed veggies:

1/2 red pepper (sliced)

1/2 yellow pepper (sliced)

1/2 white onion (chopped)

1 tbsp of tamari sauce

Dash of black pepper

Top garnish

Mixed sprouts

3-4 slices from baguette roll

Makes 4 servings

Method

Firstly, slice baguette roll diagonally to get longer bread strips. Toast them for 8 mins at 180C. Meanwhile, prepare the avocado spread. Mash the avocado and add all of the above ingredients for the avocado spread. Set aside. Now cook all the above ingredients of the mixed veggies in a pan at medium low heat. Sautéed for about 10-12 mins until the peppers are soften. Start by spreading the avocado mixture onto the toasted baguette generously. I just love an overload of creamy avocado. Then add the mixed veggies and top off with sprouts. This is so satisfying for breakfast or even during the afternoons as a snack.
