Parfait Obsession: Fully Vegan



Parfait, parfait all day! This is my current breakfast obsession so far. Homemade Strawberry Beet Smoothie with Spirulina Coconut yogurt. Incredibly rich and creamy, but low in fat and calories! Sometimes having a smoothie with all fruits can be a tad too sweet, so blending with a raw root such as beetroot helps to balance out the sweetness, giving this an earthy flavour.

Ingredients:

smoothie

1 cup of fresh strawberries

1/2 a medium beetroot 1/2 cup of unsweetened almond milk

2 frozen bananas

1 tsp of Acai powder from Organic Burst (optional: superfood)

top layer: vegan yogurt

1/2 tsp of Spirulina (I like to use Organic Burst brand)

1/2 cup of coconut yogurt

Blend until smooth in a power blender for a minute or so. Pour smoothie into a tall glass. Set aside. Now mix the Spirulina and coconut yogurt together in a small bowl. Add the top layer with the mixed yogurt. Hope you enjoy this recipe. Make this for your loved ones too!
