Strawberry Jam Compote (Refined Sugar-free)



How about having some freshly homemade strawberry compote for breakfast? I like to add them to my korean pancakes, or just plain banana gluten-free pancakes. These are super healthy, refined sugar-free, only made from natural sugars. I dislike getting the ones from the stores as they are loaded with artificial colouring, preservatives and additives in order to keep the texture and color. You can make these in 30 mins and store them in the fridge for about 5 days in an airtight container. Use 1 tbsp of lemon juice in order to preserve the freshness of your jam or compote.

Here is how to make yummy, delicious strawberry or blueberry compote/jam:

Ingredients:

  • 2 cups of frozen strawberries/blueberries

  • 1/2 cup of water

  • 1/2 cup of 100% maple syrup (reduce sweetness according to your preference)

  • 1 tbsp of lemon squeeze to preserve freshness

Method:

Start by boiling the berries with water. Simmer down to low-medium heat and cook for about 15 minutes, make sure you constantly stir the mixture to prevent the bottom from burning. Now add in the maple syrup and lemon and stir well for another 10 mins. Use the ladle or spatula to mash the berries while stirring. The texture should be puree-like consistency. Leave it to cool completely before storing in fridge. Serve immediately or chilled, it is entirely up to you. Hope you will enjoy my quick recipe!
