Valentine Raspberry Jam Buttercream Cupcakes! (Vegan, GF)
Make these lovely Valentine Cupcakes for your loved ones tomorrow! Vegan, gluten-free and mostly organic! You can use whichever jam you like, just make sure that the puree is smooth, and not those chunky bits kind of jam. So that piping the cream would be easy, with no interferences of bits being stuck at the nozzle tip.
To make this Raspberry-Rose Buttercream: Ingredients: 1 tbsp of organic raspberry jam 1/2 cup of vegan shortening (organic and non-hydrogenated - zero trans fats) 3/4 cup + 1 tbsp of icing sugar 1 tsp of vanilla extract
There is no coloring needed in this recipe. The pinky rose tint comes from the jam itself, which is natural. The jam also helps to provide the liquid element, so no milk is needed. Amazing! The taste is not too sweet. The buttercream also complements the cupcakes well as brown rice syrup is used for them. The level of sweetness is well-balanced. I know that sometimes cupcakes with frosting can get sickly sweet which is not something that I am after. Try this recipe out and let me know how you like it!
