VEGAN, GLUTEN-FREE, EGGLESS (3-INGREDIENTS) PEANUT BUTTER COOKIES



Yes, 3 Ingredients ONLY! You heard it right. *No eggs* *No milk* included.

I made a small patch today because it was just too easy to make and baked in less than 10 mins! They are soft-baked, chewy and yet very toasty and nutty. I love how simple this recipe is and purely vegan! Perfect for your kids and family on the weekend mornings when you are too lazy to whip up a storm!

Ingredients:

▪️1/2 cup peanut butter (vegan-friendly version)

▪️1/2 cup gluten-free flour (I used Bob's Mill brand of GF flour)

▪️1/4 cup of 100% maple syrup

Makes 4-5 medium cookies

Method

Place all three ingredients in a mixing bowl and mix well with a spatula. Once the mixture forms into a slightly sticky dough-like texture, it is ready for the toaster oven! Use can either wear plastic gloves to roll the dough into cookie balls or you can just simply use a spoon to scoop them onto the oven tray over parchment paper and use a fork to flatten the cookies with a little imprint design on top. Bake at 180'C for just 8 mins! Do take note that using a small toaster oven bake a lot quicker than a conventional oven. So if you are using a conventional oven to bake these cookies, I would suggest baking them for a little longer; up to 12 mins. Cool completely on a cooling rack before serving. I like to dunk them into a cup of creamy almond or soy milk.. so good. Don't forget it is also completely gluten-free! Hence you will not have a bloating aftermath, if you know what I mean.
