Vegan Tortilla PIZZA! Using vegan cheddar "Cheese"
You know what I love about pizzas? You can add whichever toppings you like and it will always taste amazing! Usually for vegan/vegetarian pizzas, they come in cheese-less versions. But what is the point of that? It will just be called tomato-flavored bread, not pizza. I finally found the right vegan cheese that suits my taste and I am sure you will feel so too! I got these from @violife and I personally think that the cheddar flavoured "cheese" is the closest flavour to the real thing. Their "cheeses" are made from 100% coconut oil and are so tasty. From the photo, it seems like the cheeses look very much like egg yolks but fret not, these are just round-shaped "cheeses" when using a round-shaped cutter.
Now here is what you need to make this recipe:
2 pieces plain tortillas
1/2 cup fresh tomato paste
2 slices @violife vegan cheddar cheese
1/2 cup of white mushrooms (sliced)
1/2 tsp chilli flakes (optional if you like it spicy)
1/2 cup green sprouts (or spinach is fine)
Makes 2 servings
Preheat your oven for 10-20 mins at a temperature of 450F (around 230C). Start with laying a piece of tortilla, followed by spreading tomato paste onto tortilla. Leave about 1 cm empty space all around the edges. Next, add your sliced mushrooms, and "cheese". Sprinkle chilli flakes over top. Now place baking sheets over your oven trays and placed the prepared tortilla pizzas onto trays. Bake for 12-15 mins at a temperature of 450F.
The pizzas are ready when the edges of the tortillas are golden brown and the "cheese" have fully melted. Of course, the smell would be amazing! Take your trays out when the pizzas are ready, Scatter fresh sprouts over the top of your pizzas and slice into quarters with a really sharp knife. The edges of the pizza will be pretty crispy, but the insides will be chewy and slightly moist. Sprinkle with a little more chilli flakes and you are ready to dig in! Serve immediately while still warm.
