Whipped Vanilla Cake Sandwich (vegetarian/ vegan-friendly)
I love making whipping cream as it is so easy and really quick to fluff up! All it takes is a minute or so to whip into a fluffy fluff of cloud heaven. You would need 1 cup of whipping cream (choose vegetable based fat only) and 1-2 tbsp of organic cane sugar. The sugar will help to stabilise the whipped cream during the whisking process when it creates tiny air bubbles, making the cream firm and also helps increase the volume. You can adjust the sweetness according to your preference. It is an option to add 1/2 tbsp of vanilla extract, I did not have it at the moment if not I would have added some.
To find veggie based whipping creams, you might need to search online to purchase locally or you can go to speciality baking stores that cater to vegan/vegetarians. I found mine in Bangsan Market in Seoul where all the baking behind the scenes are created. Check it out! Oh yes, on storing your leftover whipped cream, unfortunately you can only keep this in the fridge up to 48 hours, nothing more. Have fun with your whips and be creative!
