Zesty Orange Muffins with Choco Glaze (Vegan, Gluten-free)

These are again completely vegan, gluten-free, dairy-free and eggless! I love how chocolate and orange goes so well together! These are very light, fluffy and low in fat.


1 cup of gluten-free flour

1 tsp of baking powder

1/4 tsp of baking soda

1/3 cup of freshly squeezed orange juice

2 tsp of orange zest (grated)

1/4 tsp of Himalayan pink salts

1/4 cup + 1 tbsp of EVOO

1/4 cup of brown rice syrup

1 tbsp of 100% pure maple syrup

Preheat oven to 400F/210C. Now make sure to sift the flour before use. Mix all the dry ingredients together in a bowl till well combined. Add the wet ingredients together in another bowl and whisk well. Combine the wet and dry mixture together using a wooden ladle. You can also use an electric mixer. No need to worry about over-mixing as there is no gluten formation involved in this recipe. The batter should be thick and not runny. Use an ice cream scoop to pour batter into muffin molds. Makes 6 muffins. Bake for 18-20 mins until lightly brown. Cool completely on a wire rack for an hour or so before serving.

To add dairy free chocolate glaze:

1/4 cup of vegan chocolate chips/chunks

2 tbsp of vegan shortening or butter

Combine these 2 ingredients together and microwave for 30-40 seconds. Using a wooden spoon, stir until it is a shiny, smooth, creamy glaze. Spread over muffin tops and drizzle with more orange zest. Flavour is insane!
